Рассмотрена математическая модель процесса брожения виноградного сусла, учитывающая зависимость параметров модели от температуры. Определена аналитическая форма зависимости параметров модели от температуры (экспоненциальная и линейная). Описаны задачи идентификации параметров и оптимального управления. Приведены численные результаты решения задач оптимального управления (задача на быстродействие) и идентификации параметров при брожении сусла сорта Ркацители. Розглянуто математичну модель процесу бродіння виноградного сусла з урахуванням залежності параметрів від температури. Встановлено аналітичну форму залежності параметрів моделі від температури (експоненціальну та лінійну). Розглянуто задачі ідентифікації параметрів та оптимального керування. Наведено числові результати розв’язування задач оптимального керування (задача на швидкодію) та ідентифікації параметрів при бродінні сусла сорту Ркацителі.
