Резюме:More and more Ukrainian consumers are concerned about the methods of food production and theimpact of growing demand on natural resources. Every day, choosing food has a noticeable effect on thenatural environment.The analysis of the world's sustainable dietary scenarios and the analysis of today's diet in Ukrainereveal that the latter is neither healthy nor environmentally sustainable. The proposed dietary changes recommended by the Ministry of Health of Ukraine suggest reduction in early mortality, in particular, caused bynoncontagious diseases, but the environmental consequences of such changes are ambiguous. The goals ofimproving health and regulating climate stability, controlled by sustainable nutrition, are proved to be generally consistent and to be achieved first by reducing the consumption of eggs and dairy foods.In terms of the environment the most important aspects that distinguish the current recommendations for Ukrainian consumers from sustainable dietary patterns are the amount of animal products, in particular eggs, fish and dairy products. This leads to an increase in the anthropogenic impact on the environmentin all respects. Reforming the Ukrainian dietary recommendations is not just about providing health benefits,but is also necessary for the country to achieve global goals in sustainable development, further greening ofagricultural production and the entire food system as a whole.More sustainable recommendations for healthy diets should be developed for the Ukrainians, takinginto account the set of dietary recommendations proposed by the EAT-Lancet Commission on healthy dietsbased on sustainable food systems with the intention of combining health and sustainability aspects to reduce the use of natural resources in line with global environmental goals. At the same time, the national foodhabits, climatic conditions and financial position of all citizens of Ukraine should be considered properly.According to numerous studies, first of all, it is the young generation of the Ukrainians who are readyto consume foods that are natural and sustainable. This means that as the euro integration processes develop in Ukraine, sustainability in the choice of healthy foods will have an increasing impact on agriculture, preferences in gastronomic habits and trends in food production.
