Summary:The article analyzes the processes of deep processing of grain and obtaining a wide range of products with high added value. It has been proven that Ukraine has significant potential and resources for the development of the field of deep processing of grain. Experts predict the active development of this area in the near future, which is due to the presence of a large raw material base. It has been established that the further increase in processing volumes towards the production of biotechnological products with high added value will solve the problem with sales markets: maltodextrins and modified starches are in demand on the Ukrainian market. They are needed in the food, pulp and paper, pharmaceutical, textile, and oil and gas industries. About 60 % is for non-food use, glucose-fructose syrups with different mass fractions of glucose, crystalline glucose for the food and pharmaceutical industry, glucose syrup for its further processing into fodder amino acids and vitamins or for “green” chemical products. One of the main competitive advantages in the development of deep processing of grain and, as a result, industrial biotechnologies is the availability of sufficient resources of renewable raw materials, for example, grain, the production of which is steadily increasing. Promising markets for products of deep processing of grain are the markets of amino acids, glucose and glucose-fructose syrups, starch and starch products, bioplastics, as well as, with the necessary legal and financial support from the state, the production of bioethanol from grain raw materials. In our opinion, at the initial stage of the development of foreign technologies of deep processing of grain, it is necessary to pay attention to distilleries, whose waste is a ready raw material for the production of gluten and other bioproducts.
